Homemade Ice Cream Popsicles

Nothing pairs better with a hot summer afternoon than a chilly popsicle treat. Try these fruit-infused favorites at home.

Raspberry Mascarpone Cheesecake Popsicles

  • Ingredients
  • 9 oz. mascarpone cheese
  • 1/4 cup sour cream
  • 3 tbsp sugar
  • 1/4 cup powdered sugar
  • 1/2 cup milk
  • 1 cup fresh or frozen raspberries
  • 1/2 cup graham crackers, crushed
  • 1 tsp lemon juice

Directions

  1. In a food processor, blend mascarpone, sour cream, sugar, powdered sugar, and milk until smooth and thoroughly combined.
  2. Add 3/4 cup of raspberries (reserve 1/4 cup for later) to the mascarpone mixture, along with lemon juice and lightly pulse until combined.
  3. Gently fold in remaining raspberries and crushed graham crackers.
  4. Spoon into popsicle molds, freeze for 30-45 mins, then add the popsicle sticks. Freeze the popsicles for at least three hours, or overnight.

Honey Coconut Cream Popsicles

Honey Coconut Cream Popsicles
  • Ingredients
  • 4 1/2 cups coconut cream
  • 6 tbsp honey
  • 1/2 cup whole milk
  • 1/4 cup sweetened condensed milk
  • 2 tbsp sweetened shredded coconut
  • 1/2 tsp vanilla extract

Directions

  1. Blend coconut cream, milk, sweetened condensed milk, vanilla extract, and honey until smooth.
  2. Stir in the sweetened shredded coconut by hand.
  3. Spoon into popsicle molds, freeze for 30-45 mins, then add the popsicle sticks. Freeze the popsicles for at least three hours, or overnight.

Cara Cara Orange Creamsicles

Cara Cara Orange Creamsicles
  • Ingredients
  • 5-6 cara cara oranges (1 cup orange juice with pulp and zest of 1 orange)
  • 2 2/3 cups vanilla ice cream
  • 1 tsp vanilla extract
  • 1 tbsp orange zest
  • 3/4 cup heavy whipping cream

Directions

  1. Mix together the freshly squeezed orange juice, ice cream, and orange zest until thoroughly combined.
  2. In a separate bowl, combine the heavy whipping cream and vanilla extract. Whip the mixture until soft peaks form. Fold the whip cream mixture into the orange juice mixture.
  3. Spoon into popsicle molds,  freeze for 30-45 mins, then add the popsicle sticks. Freeze the popsicles for at least three hours, or overnight.
